- 2 medium Zucchini grated
- 1 cup Breadcrumbs
- ½ cup Parmesan cheese grated
- 2 cloves Garlic minced
- 2 Eggs beaten
- ¼ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
Grate the zucchini and squeeze out excess moisture.
In a mixing bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, minced garlic, beaten eggs, salt, and black pepper.
Heat olive oil in a frying pan over medium heat.
Form the mixture into small patties and fry in the pan until golden brown on both sides, about 3-4 minutes per side.
Drain on paper towels and serve warm.
