Ingredients

  • 2 medium Zucchini grated
  • 1 cup Breadcrumbs
  • ½ cup Parmesan cheese grated
  • 2 cloves Garlic minced
  • 2 Eggs beaten
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, breadcrumbs, Parmesan cheese, minced garlic, beaten eggs, salt, and black pepper.
  3. Heat olive oil in a frying pan over medium heat.
  4. Form the mixture into small patties and fry in the pan until golden brown on both sides, about 3-4 minutes per side.
  5. Drain on paper towels and serve warm.
