West African Peanut Stew Recipe

- 2 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 sweet potato, peeled and cubed
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- ½ cup peanut butter creamy or chunky
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ¼ teaspoon cayenne pepper optional
- to taste salt and pepper
- 2 cups kale or spinach chopped
- ¼ cup chopped peanuts for garnish
Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
Add the garlic and red bell pepper, and cook for another 2-3 minutes.
Add the sweet potato, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
Stir in the peanut butter, cumin, coriander, and cayenne pepper. Simmer for another 20 minutes, until the sweet potatoes are tender.
Season with salt and pepper to taste. Stir in the kale or spinach and cook until wilted, about 5 minutes.
Serve hot, garnished with chopped peanuts.
