Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and chopped bell pepper. Cook for another 5 minutes.
  4. Stir in the chili powder, cumin, and paprika. Cook for 1 minute.
  5. Add the diced tomatoes, kidney beans, black beans, and vegetable broth. Stir to combine.
  6. Season with salt and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Serve hot, garnished with your favorite toppings.
