Ingredients

  • 1 lb Beef Stew Meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Beef Broth
  • 2 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 teaspoon Dried Thyme
  • 2 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the beef and cook until browned.
  2. 2. Add the onions and cook until translucent.
  3. 3. Add the carrots, celery, and potatoes. Cook for a few minutes.
  4. 4. Pour in the beef broth and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let it simmer for about 45 minutes or until the vegetables are tender.
  6. 6. Season with salt, pepper, thyme, and parsley. Adjust seasoning to taste.
  7. 7. Serve hot and enjoy!
