Ingredients 

Main Ingredients

  • 4 medium zucchinis
  • 1 cup cooked quinoa
  • ½ cup diced tomatoes
  • ¼ cup chopped red onion
  • ¼ cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • ¼ cup nutritional yeast (optional)

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers to create boats.
  3. In a pan, heat olive oil over medium heat. Add garlic, onion, and bell pepper. Sauté until softened.
  4. Add diced tomatoes, quinoa, oregano, salt, and pepper. Cook for another 5 minutes.
  5. Fill zucchini boats with the mixture and place them on a baking sheet.
  6. Sprinkle nutritional yeast on top if using.
  7. Bake for 25 minutes or until zucchinis are tender.
