Ingredients 

Main Ingredients

  • 1 cup wild rice uncooked
  • 2 cups water
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup fresh parsley chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. Rinse the wild rice under cold water.
  2. In a saucepan, bring the water to a boil. Add the wild rice, reduce heat, cover, and simmer for 45 minutes or until the rice is tender.
  3. Drain any excess water from the rice and let it cool.
  4. In a large mixing bowl, combine the cooked wild rice, cherry tomatoes, cucumber, red onion, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or refrigerate for later.
