Ingredients 

Pancake Batter

  • 1 cup whole wheat flour
  • 1 cup oat flour
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • 1 ½ cups almond milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Instructions 

  1. In a mixing bowl, whisk together the whole wheat flour, oat flour, baking powder, salt, and sugar.
  2. In another bowl, mix the almond milk, vanilla extract, and vegetable oil.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  4. Heat a non-stick skillet over medium heat. Pour ¼ cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on the other side.
  6. Serve warm with your favorite toppings.
