Main Ingredients
- 1 tablespoon Olive Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 cups Mixed Vegetables (carrots, peas, potatoes)
- 1 can Diced Tomatoes
- 1 cup Coconut Milk
- 1 tablespoon Garam Masala
- 1 teaspoon Turmeric
- 1 teaspoon Cumin
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ cup Fresh Cilantro, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté until translucent.
Add the minced garlic and ginger, cook for another minute.
Add the mixed vegetables and cook for 5-7 minutes.
Stir in the diced tomatoes, coconut milk, garam masala, turmeric, cumin, salt, and black pepper.
Bring to a simmer and cook for 15-20 minutes, until the vegetables are tender.
Garnish with fresh cilantro before serving.
