Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 cups Mixed Vegetables (carrots, peas, potatoes)
  • 1 can Diced Tomatoes
  • 1 cup Coconut Milk
  • 1 tablespoon Garam Masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ cup Fresh Cilantro, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced garlic and ginger, cook for another minute.
  4. Add the mixed vegetables and cook for 5-7 minutes.
  5. Stir in the diced tomatoes, coconut milk, garam masala, turmeric, cumin, salt, and black pepper.
  6. Bring to a simmer and cook for 15-20 minutes, until the vegetables are tender.
  7. Garnish with fresh cilantro before serving.
