Vegan Udon Noodles Soup Recipe
A comforting and delicious vegan udon noodle soup that's easy to make.

Main Ingredients
- 200 g udon noodles
- 1 liter vegetable broth
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1 carrot, julienned
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon miso paste
- 1 teaspoon sesame oil
- 1 green onion, chopped
- Salt and pepper to taste
Cook udon noodles according to package instructions. Drain and set aside.
In a large pot, heat sesame oil over medium heat. Add garlic and sauté until fragrant.
Add vegetable broth, soy sauce, and miso paste. Stir until miso paste is dissolved.
Add mushrooms, carrot, and spinach. Cook until vegetables are tender.
Add cooked noodles to the pot and heat through.
Season with salt and pepper to taste. Garnish with chopped green onion.
