Ingredients 

Main Ingredients

  • 1 cup Red lentils
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 4 cups Vegetable broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 1 tablespoon Olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in tomato paste, cumin, and paprika. Cook for another 2 minutes.
  5. Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Use a blender to puree the soup until smooth.
  8. Serve hot, garnished with fresh herbs if desired.
