Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in tomato paste, cumin, and paprika. Cook for another 2 minutes.
Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until lentils are tender.
Season with salt and pepper to taste.
Use a blender to puree the soup until smooth.
Serve hot, garnished with fresh herbs if desired.
