Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 800 g Canned tomatoes
  • 2 cups Vegetable broth
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Sugar
  • ¼ cup Fresh basil, chopped

Instructions 

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the canned tomatoes, vegetable broth, salt, pepper, and sugar. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
  7. Return the soup to the pot, reheat if necessary, and stir in the fresh basil before serving.
