Vegan Tofu Scramble Breakfast Sandwiches

Main Ingredients
- 1 block firm tofu drained and crumbled
- 1 tablespoon olive oil
- 0.5 teaspoon turmeric powder
- 0.5 teaspoon garlic powder
- Salt and pepper to taste
- 4 whole grain English muffins toasted
- 1 avocado sliced
- 1 tomato sliced
- Handful of spinach leaves
Heat olive oil in a pan over medium heat.
Add crumbled tofu, turmeric, garlic powder, salt, and pepper.
Cook for 5-7 minutes, stirring occasionally.
Toast English muffins.
Assemble sandwiches with tofu scramble, avocado, tomato, and spinach.
