Ingredients 

Main Ingredients

  • 1 block Tofu firm, cubed
  • 2 large Sweet Potatoes peeled and cubed
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Olive Oil
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until softened.
  2. 2. Add curry powder, ground cumin, and ground coriander. Cook for 1-2 minutes until fragrant.
  3. 3. Add cubed sweet potatoes, coconut milk, and vegetable broth. Bring to a simmer and cook until sweet potatoes are tender, about 15-20 minutes.
  4. 4. Add cubed tofu and cook for another 5 minutes until heated through. Season with salt and pepper to taste.
  5. 5. Serve hot with rice or naan bread.
