Vegan Thai Mac n Cheese

Main Ingredients
- 2 cups elbow macaroni
- 1 cup coconut milk
- 0.5 cup nutritional yeast
- 0.25 cup cashews (soaked)
- 2 tablespoon soy sauce
- 1 tablespoon red curry paste
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Cook macaroni according to package instructions. Drain and set aside.
In a blender, combine coconut milk, nutritional yeast, soaked cashews, soy sauce, red curry paste, lime juice, garlic powder, and onion powder. Blend until smooth.
Pour the sauce into a saucepan and heat over medium heat until it thickens.
Add the cooked macaroni to the sauce and stir to coat evenly.
Season with salt and pepper to taste. Serve hot.
