Ingredients 

Main Ingredients

  • 2 cups elbow macaroni
  • 1 cup coconut milk
  • 0.5 cup nutritional yeast
  • 0.25 cup cashews (soaked)
  • 2 tablespoon soy sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions 

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a blender, combine coconut milk, nutritional yeast, soaked cashews, soy sauce, red curry paste, lime juice, garlic powder, and onion powder. Blend until smooth.
  3. Pour the sauce into a saucepan and heat over medium heat until it thickens.
  4. Add the cooked macaroni to the sauce and stir to coat evenly.
  5. Season with salt and pepper to taste. Serve hot.
