Ingredients 

Main Ingredients

  • 1 block Extra-firm tofu pressed and cubed
  • 1 cup Pineapple diced
  • 8 small Corn tortillas

Marinade

  • 2 tablespoon Olive oil
  • 2 tablespoon Soy sauce
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Garlic powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Oregano
  • 1 pinch Salt to taste

Instructions 

  1. 1. In a mixing bowl, combine all marinade ingredients. Add cubed tofu and let it marinate for at least 15 minutes.
  2. 2. Heat a skillet over medium heat. Add marinated tofu and cook until golden brown, about 10 minutes.
  3. 3. Add diced pineapple to the skillet and cook for another 5 minutes.
  4. 4. Warm the corn tortillas in a separate skillet or microwave.
  5. 5. Assemble the tacos by placing tofu and pineapple mixture onto each tortilla. Serve immediately.
