Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add diced bell pepper and corn, cook for 5 minutes.
Stir in black beans, diced tomatoes, chili powder, cumin, paprika, and salt.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
Serve hot with your favorite toppings.
