Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Bell pepper, diced
  • 1 cup Corn kernels
  • 1 can Black beans, drained and rinsed
  • 1 can Diced tomatoes
  • 2 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 cup Vegetable broth

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add diced bell pepper and corn, cook for 5 minutes.
  5. Stir in black beans, diced tomatoes, chili powder, cumin, paprika, and salt.
  6. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  7. Serve hot with your favorite toppings.
