Vegan Sweet Potato Chili

Main Ingredients
- 2 medium sweet potatoes peeled and diced
- 1 can black beans drained and rinsed
- 1 can kidney beans drained and rinsed
- 1 can diced tomatoes
- 1 onion chopped
- 2 cloves garlic minced
- 1 bell pepper chopped
- 2 cups vegetable broth
- 2 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- to taste salt and pepper
- 1 tablespoon olive oil
Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Sauté until softened.
Add sweet potatoes, chili powder, cumin, and smoked paprika. Stir to coat vegetables with spices.
Pour in vegetable broth, diced tomatoes, black beans, and kidney beans. Stir to combine.
Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until sweet potatoes are tender.
Season with salt and pepper to taste. Serve hot.
