Ingredients 

Main Ingredients

  • 2 medium Sweet Potatoes peeled and cubed
  • 1 can Chickpeas drained and rinsed
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 tablespoon Olive Oil
  • 1 cup Spinach fresh

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
  2. Add the curry powder, cumin, and coriander, and cook for another minute until fragrant.
  3. Add the sweet potatoes, chickpeas, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, until the sweet potatoes are tender.
  4. Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
  5. Serve hot with rice or naan bread.
