Ingredients 

Main Ingredients

  • 2 cups Sweet Potatoes, peeled and diced
  • 1 head Cauliflower, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. 2. Add the sweet potatoes, cauliflower, cumin, and coriander. Stir to combine.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 20 minutes.
  4. 4. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
  5. 5. Serve hot and enjoy!
