Main Ingredients
- 4 cups mashed sweet potatoes
- ½ cup coconut milk
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
Topping
- ½ cup chopped pecans
- 2 tablespoon coconut oil melted
- 2 tablespoon maple syrup
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix well.
Transfer the sweet potato mixture into a baking dish and spread it out evenly.
In a separate bowl, mix together the chopped pecans, melted coconut oil, and maple syrup for the topping.
Sprinkle the pecan mixture evenly over the sweet potato mixture in the baking dish.
Bake in the preheated oven for 40 minutes, or until the topping is golden brown and the casserole is heated through.
