Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and diced
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1 tablespoon Olive Oil
  • 4 large Tortillas
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the diced sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until tender.
  3. In a skillet, heat a bit of olive oil over medium heat. Add the black beans, corn, cumin, chili powder, and paprika. Cook for 5-7 minutes until heated through.
  4. Once the sweet potatoes are done, add them to the skillet and mix everything together.
  5. Warm the tortillas in a dry skillet or microwave.
  6. Fill each tortilla with the sweet potato and bean mixture. Roll up and serve.
