Ingredients 

Sushi Rice

  • 2 cups Sushi rice
  • 2.5 cups Water
  • ¼ cup Rice vinegar
  • 2 tablespoon Sugar
  • 1 teaspoon Salt

Fillings

  • 1 Cucumber, julienned
  • 1 Carrot, julienned
  • 1 Avocado, sliced
  • 4 sheets Nori

Instructions 

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice in a rice cooker with 2.5 cups of water.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold in the vinegar mixture.
  4. Place a nori sheet on the sushi mat, shiny side down. Spread a thin layer of rice over the nori, leaving a 1-inch border at the top.
  5. Arrange cucumber, carrot, and avocado slices in a line along the bottom edge of the rice.
  6. Roll the sushi tightly using the mat, then slice into pieces with a sharp knife.
