- 4 Bell peppers tops cut off and seeds removed
- 1 cup Cooked rice
- 1 can Black beans drained and rinsed
- 1 cup Corn kernels fresh or frozen
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and pepper
- 2 tablespoon Olive oil
Preheat oven to 375°F (190°C).
In a mixing bowl, combine cooked rice, black beans, corn, cumin, paprika, salt, and pepper.
Stuff the bell peppers with the rice mixture.
Place stuffed peppers in a baking dish and drizzle with olive oil.
Bake in preheated oven for 45 minutes, until peppers are tender.
