Ingredients 

Main Ingredients

  • 4 Bell peppers tops cut off and seeds removed
  • 1 cup Cooked rice
  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and pepper
  • 2 tablespoon Olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine cooked rice, black beans, corn, cumin, paprika, salt, and pepper.
  3. Stuff the bell peppers with the rice mixture.
  4. Place stuffed peppers in a baking dish and drizzle with olive oil.
  5. Bake in preheated oven for 45 minutes, until peppers are tender.
