Main Ingredients
- 4 Bell Peppers tops cut off and seeds removed
- 1 cup Cooked Quinoa
- 1 cup Black Beans drained and rinsed
- 1 cup Corn Kernels fresh or frozen
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- 1 cup Tomato Sauce
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, paprika, and salt.
Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
Pour tomato sauce over the stuffed peppers.
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes.
Remove from the oven and let cool slightly before serving.
