- 2 cups split peas rinsed
- 1 large onion chopped
- 2 cloves garlic minced
- 2 large carrots chopped
- 2 stalks celery chopped
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 teaspoon thyme dried
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper freshly ground
Heat the olive oil in a large pot over medium heat.
Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 10 minutes.
Add the split peas, vegetable broth, thyme, salt, and pepper. Bring to a boil.
Reduce the heat to low and simmer, covered, for about 1 hour, or until the peas are tender.
Adjust seasoning to taste and serve hot.
