Main Ingredients
- 1 cup raw cashews, soaked
- ½ cup water
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- 2 cloves garlic
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 1 (10-ounce) package frozen spinach, thawed and drained
- ½ cup diced onion
- ½ cup vegan mayonnaise
Preheat oven to 375°F (190°C).
Blend cashews, water, nutritional yeast, lemon juice, garlic, salt, and pepper until smooth.
In a bowl, mix the blended cashew mixture with artichokes, spinach, onion, and vegan mayonnaise.
Transfer to a baking dish and bake for 20 minutes or until bubbly.
