Ingredients 

Main Ingredients

  • 1 cup raw cashews, soaked
  • ½ cup water
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1 (10-ounce) package frozen spinach, thawed and drained
  • ½ cup diced onion
  • ½ cup vegan mayonnaise

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Blend cashews, water, nutritional yeast, lemon juice, garlic, salt, and pepper until smooth.
  3. In a bowl, mix the blended cashew mixture with artichokes, spinach, onion, and vegan mayonnaise.
  4. Transfer to a baking dish and bake for 20 minutes or until bubbly.
