- 2 cups spelt flour
- 1 cup almond milk unsweetened
- ½ cup maple syrup
- ¼ cup coconut oil melted
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large mixing bowl, whisk together the spelt flour, baking powder, and salt.
In another bowl, combine the almond milk, maple syrup, melted coconut oil, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
