Ingredients 

Main Ingredients

  • 200 g soba noodles
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • ¼ cup chopped green onions
  • ¼ cup chopped cilantro

Dressing

  • 3 tablespoon soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame seeds

Instructions 

  1. 1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine cooked soba noodles, shredded carrots, sliced cucumber, green onions, and cilantro.
  3. 3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, grated ginger, and sesame seeds.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or chill in the fridge for 30 minutes for flavors to meld.
