Ingredients 

Main Ingredients

  • 1 cup Red Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Cumin
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 2 cups Spinach fresh

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Add the cumin and turmeric, and cook for another minute.
  4. Add the red lentils, vegetable broth, diced tomatoes, and salt. Bring to a boil.
  5. Reduce the heat and simmer for about 25-30 minutes, until the lentils are tender.
  6. Stir in the fresh spinach and cook for another 2-3 minutes, until wilted.
  7. Serve hot and enjoy!
