Ingredients 

Main Ingredients

  • 1 cup Dried Red Beans soaked overnight
  • 1 cup Rice
  • 1 medium Onion chopped
  • 1 medium Green Bell Pepper chopped
  • 2 cloves Garlic minced
  • 2 cups Vegetable Broth
  • 1 teaspoon Thyme dried
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Rinse and drain the soaked red beans.
  2. 2. In a large pot, heat some oil over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Sauté until softened.
  3. 3. Add the soaked red beans, vegetable broth, thyme, paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 45 minutes or until the beans are tender.
  4. 4. While the beans are cooking, prepare the rice according to the package instructions.
  5. 5. Once the beans are tender, taste and adjust seasoning if needed. Serve the beans over a bed of rice.
