- 2 cups sunchokes, thinly sliced
- 2 cups apples, thinly sliced
- 1 cup arugula
- ¼ cup walnuts, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 teaspoon maple syrup

1. In a large mixing bowl, combine the thinly sliced sunchokes and apples.
2. Add the arugula and chopped walnuts to the bowl.
3. In a small bowl, whisk together the lemon juice, olive oil, and maple syrup.
4. Pour the dressing over the salad and toss to combine.
