  • 2 cups sunchokes, thinly sliced
  • 2 cups apples, thinly sliced
  • 1 cup arugula
  • ¼ cup walnuts, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon maple syrup
  • to taste salt and pepper

Instructions 

  1. 1. In a large mixing bowl, combine the thinly sliced sunchokes and apples.
