Ingredients 

Main Ingredients

  • 4 bell peppers any color
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a medium pot, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  4. In a large mixing bowl, combine the cooked quinoa, black beans, corn, onion, garlic, cumin, paprika, salt, and pepper. Mix well.
  5. Stuff each bell pepper with the quinoa mixture and place them in a baking dish. Drizzle the tops with olive oil.
  6. Bake in the preheated oven for 30 minutes, or until the peppers are tender.
  7. Serve hot and enjoy!
