Ingredients 

Queso

  • 1 cup Raw cashews soaked in water for 2 hours
  • 1 cup Water
  • 1 tablespoon Nutritional yeast
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 1 cup Salsa

Nachos

  • 1 bag Tortilla chips
  • 1 cup Black beans cooked
  • 1 cup Corn cooked
  • 1 cup Diced tomatoes
  • 1 cup Diced avocado
  • 1 tablespoon Cilantro chopped

Instructions 

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a blender, combine soaked cashews, water, nutritional yeast, garlic powder, onion powder, salt, and lemon juice. Blend until smooth.
  3. 3. Spread tortilla chips on a baking sheet. Top with black beans, corn, and diced tomatoes.
  4. 4. Drizzle the cashew queso over the nachos.
  5. 5. Bake in the preheated oven for about 10 minutes, until everything is heated through.
  6. 6. Remove from the oven and top with diced avocado and chopped cilantro. Serve with salsa on the side.
