  • 2 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Pumpkin pie spice
  • ¼ teaspoon Salt

Instructions 

  1. In a mixing bowl, whisk together pumpkin puree, almond milk, maple syrup, and vanilla extract.
  2. In another bowl, mix flour, baking powder, pumpkin pie spice, and salt.
  3. Combine the wet and dry ingredients, stirring until just combined.
  4. Heat a non-stick skillet over medium heat and lightly grease it.
  5. Pour ¼ cup of batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with remaining batter. Serve warm with your favorite toppings.
