Vegan Pumpkin Chili

- 1 tablespoon Olive oil
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 cup Pumpkin puree
- 1 can Diced tomatoes
- 1 can Black beans, drained and rinsed
- 1 can Kidney beans, drained and rinsed
- 2 cups Vegetable broth
- 1 tablespoon Chili powder
- 1 teaspoon Ground cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until softened.
Add the pumpkin puree, diced tomatoes, black beans, kidney beans, and vegetable broth. Stir to combine.
Stir in the chili powder, cumin, paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30-45 minutes.
Serve hot, garnished with your favorite toppings.
