Main Ingredients
- 2 cups Pumpkin puree
- 1 cup Coconut milk
- 1 cup Vegetable broth
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Olive oil
- 1 teaspoon Ground cumin
- 1 teaspoon Ground cinnamon
- to taste Salt and pepper
1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until softened.
2. Add pumpkin puree, coconut milk, and vegetable broth. Stir to combine.
3. Add ground cumin and ground cinnamon. Season with salt and pepper to taste.
4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
5. Use a blender to puree the soup until smooth. Serve hot.
