Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, celery, and carrots. Sauté until softened.
Add potatoes, thyme, and rosemary. Stir well.
Pour in vegetable broth and bring to a boil.
Reduce heat and simmer until potatoes are tender.
Stir in coconut milk, salt, and pepper. Cook for another 5 minutes.
Use an immersion blender to blend the soup to desired consistency.
Serve hot.
