Ingredients 

Main Ingredients

  • 4 large potatoes peeled and diced
  • 2 carrots sliced
  • 1 onion chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, celery, and carrots. Sauté until softened.
  3. Add potatoes, thyme, and rosemary. Stir well.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in coconut milk, salt, and pepper. Cook for another 5 minutes.
  7. Use an immersion blender to blend the soup to desired consistency.
  8. Serve hot.
