  • 4 medium Potatoes peeled and diced
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 8 small Tortillas
  • 1 cup Salsa
  • 1 cup Shredded lettuce

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the diced potatoes and cook until golden and tender, about 15 minutes.
  3. 3. Stir in the cumin, paprika, and garlic powder. Cook for another 5 minutes.
  4. 4. Warm the tortillas in a separate pan or microwave.
  5. 5. Assemble the tacos by placing the potato mixture on the tortillas, then top with salsa and shredded lettuce.
