- 4 medium Potatoes peeled and diced
- 1 tablespoon Olive oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Garlic powder
- 8 small Tortillas
- 1 cup Salsa
- 1 cup Shredded lettuce
1. Heat the olive oil in a skillet over medium heat.
2. Add the diced potatoes and cook until golden and tender, about 15 minutes.
3. Stir in the cumin, paprika, and garlic powder. Cook for another 5 minutes.
4. Warm the tortillas in a separate pan or microwave.
5. Assemble the tacos by placing the potato mixture on the tortillas, then top with salsa and shredded lettuce.
