Ingredients 

Main Ingredients

  • 4 medium potatoes diced
  • 1 package soy chorizo
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 8 small corn tortillas
  • 0.25 cup cilantro chopped
  • 1 lime cut into wedges
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions 

  1. Boil potatoes until tender, about 10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add soy chorizo, cook for 5 minutes.
  4. Add boiled potatoes, cook for another 5 minutes. Season with salt and pepper.
  5. Warm tortillas in a separate skillet.
  6. Assemble tacos with potato chorizo mix, cilantro, and a squeeze of lime.
