Ingredients 

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onions, carrots, and celery until softened.
  2. 2. Add the garlic and cook for another minute.
  3. 3. Add the potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Stir in the coconut milk and season with salt and pepper to taste.
  6. 6. Serve hot and enjoy!
