Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Red bell pepper, sliced
  • 1 Yellow bell pepper, sliced
  • 1.5 cups Paella rice
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Turmeric
  • 4 cups Vegetable broth
  • 1 cup Frozen peas
  • 1 cup Cherry tomatoes, halved
  • 1 Lemon, cut into wedges
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large skillet or paella pan over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and sliced bell peppers, and cook for another 5 minutes.
  4. Stir in the paella rice, smoked paprika, and turmeric, and cook for 2 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes, without stirring.
  6. Add the frozen peas and cherry tomatoes, and cook for another 5 minutes.
  7. Season with salt and pepper to taste. Serve with lemon wedges.
