Main Ingredients
- 2 tablespoon Olive oil
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 Red bell pepper, sliced
- 1 Yellow bell pepper, sliced
- 1.5 cups Paella rice
- 1 teaspoon Smoked paprika
- 1 teaspoon Turmeric
- 4 cups Vegetable broth
- 1 cup Frozen peas
- 1 cup Cherry tomatoes, halved
- 1 Lemon, cut into wedges
- to taste Salt and pepper
Heat the olive oil in a large skillet or paella pan over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and sliced bell peppers, and cook for another 5 minutes.
Stir in the paella rice, smoked paprika, and turmeric, and cook for 2 minutes.
Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for 20 minutes, without stirring.
Add the frozen peas and cherry tomatoes, and cook for another 5 minutes.
Season with salt and pepper to taste. Serve with lemon wedges.
