Vegan Mushroom Thanksgiving Stuffing Recipe

Main Ingredients
- 1 loaf crusty bread, cubed
- 2 cups vegetable broth
- 1 cup diced onions
- 1 cup diced celery
- 3 cups sliced mushrooms
- 2 cloves garlic, minced
- ¼ cup olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and pepper to taste
Preheat oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat.
Add onions, celery, and garlic. Sauté until softened.
Add mushrooms, sage, and thyme. Cook until mushrooms are tender.
In a large bowl, combine bread cubes and cooked vegetables.
Pour vegetable broth over the mixture and toss to combine.
Season with salt and pepper.
Transfer to a baking dish and bake for 30-35 minutes until golden brown.
