Ingredients

  • 200 g Mushrooms sliced
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the sliced mushrooms and cook until golden brown, about 5-7 minutes.
  3. 3. In a mixing bowl, combine the cooked mushrooms, cherry tomatoes, and cucumber.
  4. 4. Drizzle with lemon juice, and season with salt and black pepper. Toss to combine.
  5. 5. Serve immediately or chill in the refrigerator for later.
