Vegan Mushroom Ceviche
A fresh and zesty vegan ceviche made with mushrooms, perfect for a light appetizer or snack.

Main Ingredients
- 2 cups mushrooms, diced
- ½  red onion, finely chopped
- 1  tomato, diced
- 1  jalapeño, finely chopped
- ¼ cup cilantro, chopped
- ¼ cup lime juice
- to taste  Salt
- to taste  Pepper
- In a large bowl, combine mushrooms, red onion, tomato, jalapeño, and cilantro. 
- Pour lime juice over the mixture and toss to coat. 
- Season with salt and pepper to taste. 
- Let it sit for 10 minutes to allow flavors to meld. 
- Serve chilled.
