Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add sliced mushrooms and cook until they release their juices, about 5-7 minutes.
Pour in vegetable broth and bring to a boil.
Reduce heat and let it simmer for 10 minutes.
Add chopped kale, salt, and black pepper. Simmer for another 5 minutes.
Serve hot and enjoy!
