Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add sliced mushrooms and cook until they release their juices, about 5-7 minutes.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and let it simmer for 10 minutes.
  7. Add chopped kale, salt, and black pepper. Simmer for another 5 minutes.
  8. Serve hot and enjoy!
