Main Ingredients
- 1 tablespoon olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground turmeric
- 1 teaspoon ground paprika
- 1 can chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1 can diced tomatoes
- 2 cups sweet potatoes, peeled and cubed
- 1 cup dried apricots, chopped
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.25 cup fresh cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
Add cumin, cinnamon, turmeric, and paprika. Stir for 1 minute.
Add chickpeas, vegetable broth, diced tomatoes, sweet potatoes, and apricots. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until sweet potatoes are tender.
Season with salt and pepper. Garnish with fresh cilantro before serving.
