Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • 1 can chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups sweet potatoes, peeled and cubed
  • 1 cup dried apricots, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until softened.
  2. Add cumin, cinnamon, turmeric, and paprika. Stir for 1 minute.
  3. Add chickpeas, vegetable broth, diced tomatoes, sweet potatoes, and apricots. Bring to a boil.
  4. Reduce heat and simmer for 30-35 minutes, until sweet potatoes are tender.
  5. Season with salt and pepper. Garnish with fresh cilantro before serving.
