Dry Ingredients
- 1 ½ cups whole wheat flour
- 1 cup rolled oats
- ½ cup brown sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
Wet Ingredients
- ½ cup applesauce
- ½ cup almond milk
- ¼ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- ½ cup raisins
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix together flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon.
In another bowl, combine applesauce, almond milk, vegetable oil, and vanilla extract.
Add wet ingredients to dry ingredients and mix until just combined.
Fold in grated carrots and raisins.
Divide batter evenly among muffin cups.
Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
