Ingredients

  • 4 large green plantains peeled and sliced
  • 3 cloves garlic minced
  • 1 cup vegetable broth
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Heat the olive oil in a frying pan over medium heat.
  2. 2. Fry the plantain slices until golden brown, about 5-7 minutes per side.
  3. 3. Remove the plantains from the pan and place them in a mixing bowl.
  4. 4. In the same pan, sauté the minced garlic until fragrant, about 1-2 minutes.
  5. 5. Add the garlic to the plantains, along with the vegetable broth, salt, and pepper.
  6. 6. Mash the mixture using a mortar and pestle until well combined and smooth.
  7. 7. Serve hot as a main dish or side.
