  • 1 cup Quinoa rinsed
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn Kernels fresh or frozen
  • 1 Red Bell Pepper diced
  • 1 Avocado sliced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Cilantro chopped
  • 1 Lime juiced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Cook the quinoa according to package instructions.
  2. 2. In a large mixing bowl, combine the cooked quinoa, black beans, corn, red bell pepper, cherry tomatoes, and cilantro.
  3. 3. In a small bowl, whisk together the lime juice, cumin, chili powder, salt, and black pepper.
  4. 4. Pour the dressing over the quinoa mixture and toss to combine.
  5. 5. Serve the quinoa mixture in bowls and top with sliced avocado.
