- ½ cup unsweetened soy milk
- 1 cup neutral oil (like canola or sunflower)
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
In a tall container, combine soy milk, apple cider vinegar, Dijon mustard, and salt.
Using an immersion blender, blend the mixture while slowly drizzling in the oil.
Continue blending until the mixture thickens to a mayo consistency.
Taste and adjust seasoning if needed.
Store in a sealed container in the fridge for up to a week.
